Clammed Up

Not having any idea what to have for dinner tonight, I looked to the pantry. And there, amidst about five bottles of ketchup and Red Hot, sat a Costco-sized package of canned clams. Six cans of them, to be precise.

When I bought them, I’d envisioned clam chowder, but I was hungry NOW and didn’t want to wait that long. So I did what any rational person would do – I improvised clam sauce to serve over capellini (there was no linguine in the pantry).

I used the bones of a recipe from allrecipes.com, but healthified it quite a bit – like, instead of 1/4 c of butter and 1/2 c of oil, I used 1 tbsp of butter and about 2 tbsp of oil. The result wasn’t exactly “healthy,” but it was actually pretty tasty. I did put too much pepper in it, though (black and crushed red). Noted for next time.

And considering how fast and easy it was, there will be a next time. (Plus, I have, like, five more cans of clams hanging out in my pantry, so yeah. Next time.)
