Forbidden Pudding

Today was probably the first day in at least two months where I didn’t have back-to-back meetings for 9 hours straight. I had three meetings, but they were spaced out, and they all went well. Since I checked my schedule last night before bed, I knew I’d be working from home to take full advantage of the day. That was an excellent decision, because I got soooooo much done. I did two loads of laundry, switched out my sheets and towels, ran some errands and bought some food, installed a new shower head, and did some cooking. It may not sound like much, but trust me, when you’re working primarily with one hand, it’s a LOT. I’m especially proud of the shower head installation that I pulled off one-handedly.

I put myself on the disaster schedule for tonight, so I wanted to get some food cooked up just in case we got called. I pressure-cooked some chicken, steamed some broccoli, and cooked up an entire bag of black rice, or “forbidden rice.” Not quite realizing how much the entire bag would make, I found myself stuck with about 6 cups of cooked rice. Initially, I thought of freezing what I didn’t use with my chicken and broccoli, but then I remembered the blueberries I just bought, and the coconut milk that’s been sitting in my cupboard for probably two years. Thus, dessert came about.

I took half of the rice and dumped a can of coconut milk in it along with some almond coconut milk. I heated the whole thing up with a few teaspoons of honey and let it simmer, and then I added some vanilla and a whole bunch of fresh blueberries. Since I wasn’t ready to eat dinner at 6, I put everything in the fridge and went to the gym. Less than 25 minutes after I started the treadmill, I got a call to “hang out” (read: go to a fire) with two of my favorite volunteers, so I didn’t get back to my makeshift rice pudding until hours later. Surprisingly, the pudding was still sort of warm (odd after five hours in the fridge), but it had set up nicely. Plus, it’s a nice purple color from both the rice and the blueberries. I have to say, it’s quite tasty. Blueberries + coconut is a great combination!

Here’s hoping tomorrow is as calm and productive as today was! 🙂
