What is a single girl to do with 3 lbs of kale leaves? Make a ton of kale chips, of course!
I found a recipe for “Asian Kale Chips” that I was able to doctor up a little (added a little sriracha and ginger to the mix) and I’ve been keeping an eye on it for much of the past 24 hours. The mix smelled pretty great when I was working it into the kale leaves, so I was really excited to try some of them today. I have to say, they do not disappoint in the slightest – these might be the best darn kale chips I’ve ever had in my life. They’re crunchy and salty and downright addictive – I love miso as an ingredient, so I’m basically in heaven with these chips.
I’m so in love with them that I’ve eaten an unnatural amount of them today. We all know that kale is good for you, but kale in this enormous amount might not be so great. Fingers crossed the kale doesn’t kill me! 🙂
